I can't really help you out with video, but the University of Utah has a great intro EE demo that transmits sound with a very simple circuit.

This is fun because you can plug your Ipod directly into this and listen to it play through a laser. Nothing super fancy involved, but impresses the hell out of people.
If you want to get more involved you'll need to look into some fun modulation schemes used in video transmissions. Starting with radio modulation and demod is probably a good place to begin your research.
